I am always on the lookout for a good healthy recipe – especially when it comes to feeding my toddler. Before having my son, I never imagined how much time and effort I would spend in my kitchen trying to make him nutritious meals and snacks. Most of the days now, if I’m not cooking or baking, I’m probably pinning recipes on Pinterest to make in the future!
I am happy to live in a time where finding new recipes for your family is just a mouse click away! Seriously, what did people do before Google or Pinterest existed? Call a friend, a neighbor, or even walk over to the library? Just the thought of that exhausts me!
Why these peanut butter oatmeal muffins are perfect for children
If you’re like me, then you’re probably constantly trying to incorporate nutritious ingredients in your toddler’s food every chance you get. These healthy breakfast muffins are perfect for just that! You can sneak in some flax seeds, chia seeds, and even some broccoli! (I’m kidding about that last one, but you get my point!)
These peanut butter oatmeal muffins are also perfect for so many other reasons:
You can substitute many ingredients to fit your child’s needs
One of my favorite things about this recipe is the fact you can substitute so many of the ingredients to have it fit the eating style of your child. I substituted about 3 ingredients and just used what I had in my pantry and they turned out great! (Scroll down to the recipe to see what I substituted)
You can add different types of toppings to change the flavor
You can top off these peanut butter oatmeal muffins with whatever your heart desires! I topped some off with our favorite strawberry jam (for a pb&J version) and I added organic dark chocolate chips to some of the others (these were my sons favorite!)
Other topping ideas include blueberries, sunflower seeds, or different flavored jams. The options are endless!
They last for a few days in the refrigerator and can be frozen for later use
The best part about these healthy breakfast muffins is that they last in the refrigerator up to 3 days and for a few weeks in the freezer! I will usually make a large batch (12-24 muffins) and freeze them for the days I may be slacking on breakfast or even for emergency snacks. You can thaw them quickly in an oven or microwave or take them out the night before to thaw in the fridge. These have become lifesavers a few times and boy was I glad I had some stashed away.
They are portable
These are also perfect because they are easily portable. The best part? You won’t be missing out on any of the nutrition even while enjoying them on the go. I also carry these with me when we go out at different times of the day for a quick and nutritious snack for both my son and myself.
They are so quick and easy to make, your child can help as well
The last great reason for making this recipe at home is being able to include your child in the assembling process. My son enjoys scooping, pouring, and mixing so this was the perfect recipe for just that! Future chef? I wouldn’t mind!
Peanut Butter Oatmeal Muffins Recipe
Original recipe, taken from Feasting on Fruit’s website.
Ingredients
- 1/2 cup unsweetened applesauce
- 1/2 cup No Sugar Added SunButter (I used organic smooth peanut butter instead)
- 1/4 cup coconut sugar
- 1/2 cup nondairy milk (I used grass-fed cows milk)
- 1 1/2 (cup (150g) rolled oats
- 1/4 cup (30g) hemp seeds (I used flax seeds instead)
- 2 tbsp (20g) chia seeds
- 1 tsp cinnamon
- 1/4 tsp salt
- Toppings of choice: nuts, seeds, jam, frozen berries, chocolate chips, etc.
Instructions
- Heat oven to 350ºF. Brush coconut oil onto muffin pan.
- Mix together the applesauce, coconut sugar, milk, and peanut butter.
- Add the remaining ingredients and mix well.
- Scoop the batter into each muffin tin until it is 3/4 full.
- Add toppings of choice.
- Bake for 20-25 minutes or until edges are golden brown.
- Let them cool, and enjoy!

Other than the fact this peanut butter oatmeal muffin recipe was delicious, it was also super fun to make! I can’t wait to make them again and again… and again. These have definitely become a favorite in our household and we’ll probably be making them for years to come.
